Introduction

This is a very moist banana bread. My kids love when I make these while they are at school. The house smells so good when they rush in the door! We usually make them into muffins. The nutrition is calculated for 18 muffins rather than loaf of banana bread. This is a very moist banana bread. My kids love when I make these while they are at school. Ingredients

    3 or more bananas (mashed)
    1 cup sugar
    1/4 cup oil or butter (melted)
    blue bonnet Light is used for nutrition calculations.
    1 tsp baking soda
    ½ tsp salt
    2 eggs
    1½ cup flour

Directions

Combine sugar, butter, baking soda, salt and eggs; add flour and banana alternating between the two until mixed. (do not over mix)

Bake about an hour at 350 if making loaf of bread.
Bake about 20-25 minutes if doing muffins

    I doubled the recipe and substituted 1/2 cup of the sugar with brown sugar and added 1teaspoon of allspice and one teaspoon of cinnamon. I used 8 bananas. They are moist and delicious. - 10/10/15
