I love eggplant so I love finding new recipes but when I’m looking for new recipes I really want to find pictures of the food not people! Unless the picture of people is with THE FOOD! This recipe was alright I made it twice The first time I thought it was way too salty and gooey so I used less se
I used canned tomatoes and added herbs and spices to lower the calorie content instead of using the marinara sauce. It was just as easy. I baked the eggplant, then slightly layered two of three slices, spooned tomatoes over and sprinkled the cheese on top. Broiled till cheese melted.
I liked the fast cooking time. Excellent flavor & low sodium, too! I did rinse the salt off before breading to help lower salt levels.
