I made this on the stove but simplified it by not thickening it. I grated carrots into it instead. Also used only 8 oz of 2% Velveeta (low fat), and used a potato masher on the veggies to make it sip-able. My husband HATES cauliflower, but he loved this soup. It was very filling too.
