Ingredients

You’ll Need:
1 ½ lbs. boneless chicken breasts, cut into bite sized pieces
¼ cup cornstarch mixed with ¼ tsp. salt
2 tblsp. canola oil
2 minced garlic cloves
1/3 cup orange juice concentrate
½ cup water
¼ cup soy sauce
1 tblsp. apple cider vinegar
¼ tsp. minced ginger
½ tsp. crushed red pepper flakes
¼ cup brown sugar, loosely packed
1 tblsp. ketchup
Directions
Preparation:
Toss chicken chunks in salted cornstarch until lightly coated. Heat a large skillet over medium-high heat. Once hot, add oil and garlic and stir gently. Add chicken chunks and cook quickly until chicken browns. Remove chicken and set aside. In the same skillet, stir in the rest of the ingredients and bring to a boil. Stir until the brown sugar dissolves. Add chicken back in, reduce heat to low and simmer until chicken is cooked throughout and sauce thickens, about 15 minutes.
Serve over simple white or brown rice, garnished with scallions.

ok i have to say this is HANDS DOWN the BEST thing i have ever cooked in my life and very near the best thing i have ever eaten. i made it twice in one week i loved it so much (even my boyfriend loves it) i used pineapple juice instead of orange and WOW! this is OUTSTANDING! thanks so much - 4/25/11

This was pretty good! I ended up adding about a cap-full of bourbon to give it an extra kick. I think next time I'd cut back on the OJ (it was a bit too strong for the other flavors) and thicken the sauce a little bit. We like heat so I might add more crushed pepper. Not sure if this is only 199 cals like listed in nutritionals for one serving, but it was VERY tasty and moist- from reading previous reviews, I did not include the red pepper flakes...but wished that I had because it seemed like the recipe was missing a little something.
