Ingredients

    1 1/2 lb. shredded potatoes
    1 medium onion, chopped
    1/2 cup white flour
    2 egg whites
    1 tsp. ground black pepper

Directions

- Preheat oven to 450 F. Place a large, ungreased cookie sheet in the oven.
- Place onions and potatoes in a large colander and squeeze off any excess moisture.
- Transfer onions and potatoes to a large mixing bowl. Add egg whites, flour and black pepper. Combine well with fork.
- Remove cookie sheet from oven and coat with non-stick cooking spray. Form twelve 2 1/2 inch flattened rounds and place on cookie sheet. Cook 7-8 minutes each side or until crispy.

    These are great! I used wheat flour and added a little salt. Sprayed the tops of the latkes before baking for crispier ones. - 9/18/10

    I was impressed with this recipe. I was nervous at first when placing them on the cookie sheet that they wouldn't stay together. My daughter even made a comment about having baked hash browns. But they held together beautifully & tasted wonderful. Even my husband who doesn't like latkes had thirds. - 12/21/14

    I liked this one. I added 1/2 tsp salt. I would skip the black pepper, for me its too much, even when I reduced it to 1/2 tsp. On my second batch I made, I made them Indian style- added curry powder, paprika for color, and garlic powder. - 1/30/11
