Number of Servings: 7

Ingredients

    1.5 to 2 lbs pork tenderloin
    1 onion, sliced in rings
    1/4 cup soy sauce [I use low-sodium]
    1/4 cup brown sugar
    3 tablespoons white wine vinegar
    3 tablespoons water
    2 garlic cloves, chopped
    1/2 cup creamy peanut butter [I use reduced fat]
    2 tablespoons chopped peanuts (garnish; optional, not included in nutritionals)
    1 lime, cut in wedges (garnish; optional)

Directions

(Use a 4-6 quart crockpot.)

- Spread onion slices on bottom of slowcooker.
- Place pork on top.
- Add brown sugar, soy sauce, vinegar, water, garlic, and peanut butter. No need to stir--the peanut butter needs to melt before you can do so.
- Cover and cook on low for 8 hours, or on high for 4-6.
- 1 hour before serving, flip the meat over in the crockpot to allow the other side to soak up the sauce. (This is where you mix the sauce, if necessary.)

Garnish with chopped peanuts, and serve with lime wedges. (The lime juice mixed with the peanut butter is delicious!)

    This is extremely good! I'll be cooking this over and over. It was a big hit with everyone. I did add a couple of diagonal sliced carrots and a small peice of celery since I had them laying around. Also added a little heat with about 1/2 tsp Siracha sauce, to go with the Thai/asian peanut flavor. - 7/10/09

    This was the most wonderful thing I have cooked to date. I have 4 kids under the age of 12 and A Pickie hubby and They all ate it and wanted it again for tonight's dinner. We will be making this over and over. - 10/27/09

    This was pretty good. next time I plan to add some red pepper flakes for some heat and to brown/sear the tenderloin before placing in the slow cooker to lock some of the juices in. I will season with salt, pepper, garlic and celery salt and then brown. - 9/24/09

    I had pork chops so I decided to try this recipe with them. I didn't use the slow cooker, I poured the sauce over them in a pan. My family loved it. I can't wait to try the original recipe. - 11/14/12

    I am a very picky eater and I LOVED this recipe! I didn't eat the sauce that ends up being made with everything, but ate the meat and the flavor was AMAZING! My family and my boyfriend and family liked it as well! Will be making this again and again. - 10/27/10
