Introduction

Number of Servings: 5

Ingredients

    14oz can red sockeye salmon or pink salmon - drained
    1 extra large egg
    1/3 to 1/2 cup whole wheat oatmeal breadcrumbs - enough to hold the salmon together but you don't want them to be too heavy.
    1/4 cup diced onions
    1 tsp basil - more to taste
    1 tsp parsley flakes - same as above
    2 tsp lemon juice


Directions

Mix all ingredients.
Mash up the drained salmon. Form into patties (makes about 5 nice sized patties).
Cook in a little olive oil over medium.
Heat until browned on both sides.
Serve topped with lowfat or fat free sour cream or just eat them plain.
These are very tasty cold as well, and go nicely with cooked brown rice. You can add or omit spices according to your tastes.

    These are a definite winner! I put everything in the blender to mix it because I don't care for the bones in canned salmon but it leaves the calcium intact. - 3/13/07

    I love these I did use fresh salmon, just to lower the salt. I love the salt but DH and I have to avoid it. Thanks I like the recipe just as it is Pat in Maine. Thanks - 3/5/13

    No need to pick the bones out. Just crush them and mix well. They are a great source of calcium. Not sure what whole wheat oatmeal bread crumbs are but just use regular oats. Works fine. I add a bit of ketchup when mixing to give a little more flavor. - 2/25/13

    I don't have the whole wheat oatmeal breadcrumbs either, wonder if I could just use Oatmeal? Don't see why not.

    I have eaten salmon patties for years and never thought to make them healthier! I am definitely going to try blending them next time I have them instead of standing there picking out all the bones. That sounds better with more calcium anyway. Thank you for that idea. :) - 12/10/08

    I didn't have whole wheat oatmeal breadcrumbs, so I just had to use plain breadcrumbs. I also added about 1/4 c. ground flax. The patties were very good. - 6/4/08
