Introduction

Ingredients

    1/2 cup light margarine
    1 cup sugar
    6 oz nonfat vanilla yogurt
    1 egg
    2 tsp vanilla extract
    2-1/2 cups flour
    2 tsp baking soda
    2 tsp cinnamon
    1/2 tsp salt
    1 lb (about 4 small) apples, peeled, cored and chopped

Directions

Cream margarine.
Add sugar.
Add yogurt and egg, beating until fluffy.
Combine dry ingredients and mix well.
Stir into creamed mixture.
Add apples.
Pour into 9x13 baking dish sprayed with nonstick spray. Bake at 350 for 50-60 minutes or until toothpick comes out clean.

    This cake is delicious and fillng!
    I've also made it with 2 cups of grated zucchinis instead of apples and cut back the sugar by using 2/3 cup of sugar instead of 1 for a nice breakfast cake. Thanks

    I absolutely love this cake!!!! Its so moist and had so much flavor! I indulged a little and add a little cool whip frosting. It was the perfect complement because it was really light as well. Very good! - 2/5/10

    I cooked mine in a glass dish and I think it cooked faster. It was done in 40 minutes and I think it was actually a little dry. It was a decent amount of cake for 177 cals (18 slices and my ingredients). Thanks! - 3/21/07

    Very good! I used butter (what I had) slightly less sugar, 2 apples and a cup of shredded zuccini (also what I had.) I was using a glass dish also, so I kept an eye on it. The cooking time was quicker (I am also at sea level) but it was moist and superb! - 9/19/10

    i don't know what the rest of you did, but i had to add way more than just 1/2 cup of margarine. and my cake never rose one bit- it was flat and doughy-did i do something wrong? - 1/31/11

    Rule of thumb, if changing from metal to glass cookware, lower oven by 25 degrees. Done it many times and it works. - 9/27/10

    Delicious! I talked my 6 year-old into this as a birthday cake. He wanted to decorate it, so buttercream frosting made it not quite so healthy, but the whole family loved it (the kids actually ate the cake and not just the frosting!) I will definitely make this again, sans the buttercream! - 1/17/08

    Okay, I did use butter and added oat flour and 1/2 ww flour, and brown sugar, but OMG it was delicious! The most tender, lite and flavorful cake of it's kind!     This was awesome! I made it exactly as the recipe said but baked it in a bundt pan. Then I made a quick glaze out of 1 c. powdered sugar, 2 tsp lemon juice, 1 tsp vanilla, & 2 tbsp milk. It got rave reviews at church and from my husband. - 9/27/11

    I omitted the salt, and reduced the sugar calories by using half splenda, half sugar. And I used light yogurt. That cut the calories to 159 per serving, and the recipe calculater said the sodium was 50mg, but I think that was wrong, there is 2 tsp of baking soda,which comes to 169mg per serving. - 8/8/07
