Ingredients

1/2 cup light margarine
1 cup sugar
6 oz nonfat vanilla yogurt
1 egg
2 tsp vanilla extract
2-1/2 cups flour
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 lb (about 4 small) apples, peeled, cored and chopped
Directions
Cream margarine.
Add sugar.
Add yogurt and egg, beating until fluffy.
Combine dry ingredients and mix well.
Stir into creamed mixture.
Add apples.
Pour into 9x13 baking dish sprayed with nonstick spray. Bake at 350 for 50-60 minutes or until toothpick comes out clean.

Delicious! I talked my 6 year-old into this as a birthday cake. He wanted to decorate it, so buttercream frosting made it not quite so healthy, but the whole family loved it (the kids actually ate the cake and not just the frosting!) I will definitely make this again, sans the buttercream! - 1/17/08

Okay, I did use butter and added oat flour and 1/2 ww flour, and brown sugar, but OMG it was delicious! The most tender, lite and flavorful cake of it's kind! I actually made small bread loaves out of it and will give them away. Healthy and delicious! Very delicate though. Wrap with care... - 10/4/11

I omitted the salt, and reduced the sugar calories by using half splenda, half sugar. And I used light yogurt. That cut the calories to 159 per serving, and the recipe calculater said the sodium was 50mg, but I think that was wrong, there is 2 tsp of baking soda,which comes to 169mg per serving. - 8/8/07
