Twist on my usual tuna salad, using olives instead of dill pickles and cottage cheese instead of salad dressing/mayonnaise. I also added couscous as an experiment and liked the heartiness it added.Very yummy served on toasted bread.

I started cooking couscous with bouillon and it really perks it up. I like to stir in some tuna and whatever vegetables I happen to have around. It's also really great with hominy.
I like to make this and portion it out for my husband and I to take for lunch.Makes a good midday meal packed with protein and low in fat :)
