Introduction

I like to make this and portion it out for my husband and I to take for lunch.

Number of Servings: 4

Ingredients

    Cheddar Cheese 40g

    Crushed Garlic 1 tsp

    Onions 1 tblspn finely chopped

    Couscous 1 cup uncooked

    Light Butter Spread 1 tblspn

    Peas 1 cup

    Yellow Sweet Corn 1 cup kernels

    Tuna, Canned in Water 240g (drained)

    Pinch of salt and pepper

    Water 1 cup

Directions

Bring the cup of water to the boil in small-medium sized saucepan

Add in the garlic, onion, salt, pepper and butter.

Also add in the veggies.

Once the veggies have softened slightly, add in the couscous

remove from heat and add in the cheese (preferably grated or thin sliced). You can also now add in the tuna.

Allow to stand for no less than 5 mins stirring occasionally.

The mix will thicken and the couscous soften, and youll have a yummy meal or side.
