Ingredients

    84 g. dry couscous
    2 oz. Trader Joe's Low Sodium Garden Patch Juice blend
    3 oz. water
    1 tsp. olive oil
    Dash garlic powder

    140 g. celery, diced
    100 g. each: tomatoes, broccoli stems, carrots and radishes, diced
    80 g. scallions, diced
    84 g. red bell pepper, diced
    58 g. fresh spinach, cut chiffonade
    >
    1 can solid white tuna in water, drained but not squeezed dry
    2 tsp olive oil
    Curry powder, garlic powder, and black pepper to taste

Directions

bring Garden Patch juice and water to boil in small covered saucepan with garlic and olive oil. Stir in couscous, cover, and take off heat. Let stand.

Prep all vegetables.

Drain tuna, but do not squeeze dry.

Take lid off saucepan, and fluff couscous. Allow to cool to room temperature. Fold couscous into vegetables. Add tuna, olive oil and seasonings to taste and mix gently.
