When I visited my first husband's family in Mexico, my mother-in-law made this, and I had to have the recipe. It is a staple recipe still in my household.
This is a little better way to get your veggies in. You can also add some tomatoes to color it up a bit or some more spice. Salsa added after it is served is a nice way to liven this up as it is more of a filler dish that I use when I have had a bit of an indulgent day!!!
