Introduction

This is an alternative to corn bread, it's more doughy! Also, if you like a "sweeter" corn bread, add a bit more sugar. This is an alternative to corn bread, it's more doughy! Also, if you like a "sweeter" corn bread, add a bit more sugar.

Ingredients

    1 cup flour
    1 cup cornmeal
    3 T sugar
    1/2 tsp salt
    1/2 tsp baking soda
    1 egg
    1 cup reduced fat sour cream
    1 stick butter melted
    1 can (15-1/4 oz) whole kernel corn, UNdrained
    1 can (14-3/4 oz) cream-style corn

Directions

Combine the first five ingredients in a large bowl, set aside. In a small bowl, whisk egg, sour cream, and butter. Stir in corn. Stir into dry ingredients just until moistened. Bake @ 350 for 30-35 minutes (test with toothpick for doneness)in a 9x13x2 pan coated with cooking spray. Serve warm and refrigerate leftovers.

  • Incredible!
    Delicious! I used blue corn meal and only 1/3 cup of sour cream and increased the sugar to 1/3 cup. Baked in a 9x13 pan it is enough for 18 servings. - 6/20/14
