I got this recipe at a WW meeting a few years ago...they use one can of corn. Also, that recipe turned off the cooker 1/2 hr before serving, add an 8oz pkg of fat free cream cheese and allow to soften. Stir it in and serve. I serve with brown rice, and dish the chicken over it. Very Very good.
This was really good. My husband and I served it over 1 cup cooked rice. Obviously, this increased the total calories but it made an excellent meal under 500 cal. It was light but very filling. I used very hot salsa so it had a spicy kick. We will make this again.
This was fabulous; served with whole wheat tortilla pieces and couple avocado slices for those not watching calories. Very easy and very tasty. Will make again and again!!
