Ingredients

orange juice-enough to cover chicken while cooking
1 lb chicken-I use boneless skinless thighs, because I like dark meat
1 red onion sliced into rings
1-3 canned chipotle peppers-depending on how hot you like it
1 Tbsp oregano
salt to taste
Directions
put chicken in a pot and cover with orange juice-you can use whatever kind you have, or sqeeze some fresh-I use frozen, and add the water right in the pot. Bring to boil. Slice the onion into rings, and spred over chicken, add the orgeano and chipotle-salt to taste, and let simmer. I usually serve with mexican style rice.
