Introduction

This is a little better way to get your veggies in. You can also add some tomatoes to color it up a bit or some more spice. Salsa added after it is served is a nice way to liven this up as it is more of a filler dish that I use when I have had a bit of an indulgent day!!! Ingredients

    2 tbsp Olive Oil
    1/2 Cup raw onions
    1 Cup Cottage cheese
    2 Cups Frozed Spinach
    3 Cups Spagetti Squash
    1/4 Cup Parmesan Cheese Grated
    2 Tbsp Garlic Powder
    1 tsp salt
    2 tsp parsley dried

Directions

Cook Large Spagetti squash in microwave 10 - 15 minutes. Scrape out when cooked into a casserol dish, add 2 cups of frozen spinach and 1 cup of 1% cottage cheese. Add spices and mix all together.

Saute onions with Olive oil until transparent and add to spinach mixtue. Sprinkle parmasen cheese on top and bake at 300 degrees for 30 - 40 minutes, (or until excess fluid has evaporated). Makes 6 good size servings.
