Introduction

A light and tasty whole meal. A light and tasty whole meal.
Number of Servings: 12

Ingredients

    1 pkg. egg noodles
    2 cups chicken breast (cooked and diced)
    1 pkg lightly steamed broccoli
    Dressing:
    1 cup extra virgin olive oil
    1/2 cup balsamic vinegar
    2 tsp soy sauce
    2 split garlic cloves
    4 cups shredded Montery Jack cheese

Directions

Cook chicken, boil noodles, and steam broccoli.
Drain the noodles and brocoli.
Mix the three together and set aside to make the dressing.
Mince the garlic cloves and mix remaining dressing ingredients.
Pour dressing over the chicken mixture and set in the refrigerator to chill overnight (or at least 4 hours).
Serve with 1/3 cup of shredded cheese as a topping. Mix in and enjoy!
Some people also like to serve with a crusty Italian bread slice.

    I have not made this so will not rate it. I would be nice if everyone would do this as well.Some did comment but not rate wiich is fine, but to give something a one star having not made it is totallly humilitating for the person who posted it.

    This was good. I substituted reduced fat cheese. low sodium soy sauce and only used 1/2 cup of olive oil to make it healther. - 3/17/07

    I modified. I cut the oil to a half cup, vinegar to a quarter. I used farfelle noodles (bow tie). The general concept is great, as it was is a little too much for me though. Thank you for sharing, I will make this again! - 9/15/10

    I made this recipe with 1/2 C olive oil and 1 C cheese. I added red peppers to add some beautiful color. Also used whole grain pasta instead of egg noodles. This reduced the calories and was still delicious. - 1/27/08

    Good recipe but I cut the oil to 1/4 cup. 1 cup seemed like way too much oil. I usually make a new recipe as written then make adjustments the next time. But I felt it had too much oil, so cut it when I made it the first time. Was still very good. - 9/22/19

    Made it exactly how it was posted onlyseasoning the chicken and the topping it off with salt,pepper and garlic power (same as the chicken) it was wonderful. my husband and family are picky matters so to find something new that the will eat the heck out of is rare.     It sounds good. I know I would like it and plan to make it someime, I will probably reduce the amount of oil and use low-fat cheese and whole grain pasta. I don't need the calories. - 1/27/08

    I plan on making this...with a few changes. adding diced red peppers, red or green onions, grape tomatoes. Using Kraft Zesty Italian dressing instead of all the oil, vinegar, garlic & soy..I think it would be great as is but I might would serve it hot...with the Italian bread. YUM!! - 1/27/08

    I like the idea of this recipe. I think when I make it, I will use whole wheat pasta, use a lower fat cheese and maybe less of it, and use less olive oil. I really appreciate folks sharing their recipes. Even when I don't make it verbatim, it gives me an idea that I can tailor to our families tastes - 1/27/08

    I make chicken (or salmon) (whole-wheat) pasta salad all the time. However, mine has far fewer calories because I use light mayo instead of all that oil and I don't put in any cheese. I serve it over a bed of lettuce with other fresh veggies. My kids love it. - 10/27/07

    Well, I haven't made this yet but I'm wondering if anyone can enlighten me as to what size package of egg noodles is used? I'm guessing 2#, based on the amounts used for oil, vinegar & cheese and the number of servings. I'll use whole wheat noodles and 2% cheese when I make it. - 10/22/07
