What a sweet warm treat for a cold afternoon! This dish is like having a piece of apple pie but without the large amount of fat and carbs from the dough. Ingredients

    4 small tart apples, such as Granny Smith, washed and cored

    Filling:
    1 tablespoon Smart Balance butter blend, softened
    1 tablespoon pecans, toasted and chopped
    2 tablespoons raisins
    1 tablespoon old-fashioned oats
    1 tablespoon brown sugar
    1/4 teaspoon cinnamon

Directions

Preheat oven to 375 degrees Fahrenheit. Place the apples in a baking dish.

Combine raisins in a small bowl with 1 tablespoon of warm water and allow to rest for 10 minutes. (This is an important step! If you skip this step, the raisins will burn in the oven.)

Combine all ingredients for the filling in a bowl. Divide the filling evenly among the apples.

Pour 1/2 cup water into the bottom of the baking dish. Bake for 30 minutes. Remove from oven and allow to cool slightly before eating.

Makes 4 servings

    Very tasty breakfast or dessert. I cut down the recipe to make 1 apple. Microwaved in a ramekin for 3 - 4 minutes. Very quick and easy - 4/1/11

    I make these in the microwave. I use a sweeter apple Gala, fugi or honeycrisp. No sugar is needed. Cinnamon, cardamon or nutmeg works. I have used oatbran in the mix and leave out the nuts to eat as a side. I am diabetic, avoid sugar as much as I can sometimes I chop the raisins. No BS spikes for me - 11/20/11

    You can get the same result and have it for breakfast if you use a sweeter apple. Just core and wash the apple,stuff with raisins nuts and sprinkle with cinnamon microwave till soft. Yummy - 3/30/11

    Made just as directed. I think I would take some of the peel off the top of the apple. Mine required more baking time as they were a bit crunchy. Made for company and everyone enjoyed them, especially the 2 diabetics! - 4/3/11

    Butter is a GOOD fat. Butter blends contain bad fat, rancid oils and chemicals detrimental to our health. I substitut brown sugar with coconut sugar, a healthier choice that gives the same caramelized flavor as brown sugar. - 9/14/14

    I used this recipe as a base. I cut the recipe down to one apple, instead of nuts and margarine I used a scant teaspoon of peanut butter. I cooked it in my microwave for 3 minutes as others suggested. It is delicious. Next time I want to bake. It satisfied my pie craving. - 12/14/13

    I wonder what the filling looks like. I really get annoyed with the pictures not matching the finished product. This just says to core the apple and no other prep is mentioned. Very Annoying! - 4/2/12

    I used Gala apples & they could have cooked longer. I cut the recipe in half for just 2 apples, and added a little nutmeg to the top. The photo is deceiving, it looks like the apple was cut in half, but that's not what the recipe says. I just used a knife and cored the apples. It was very tasty. - 4/1/12

    This looks so yummy. I'm not a huge fan of raisins, though, so I'm wondering how it might be with craisins instead. Has anyone already tried? Should I still soak them in water like the the recipe suggests with the raisins? I might give this one a try soon! Thanks! - 3/30/12
