Ingredients

    1 Cup whole grain flour
    1/2 Cup Flour, white
    1 1/2 tsp Baking Powder
    1/4 tsp Baking Soda
    2 Egg white
    1 tsp Cinnamon
    1 Cup Bananas Mashed (about 3)
    1/2 Cup Granulated Sugar
    1/4 Cup Applesauce
    1/8 Tsp Salt

Directions

Combine sugar, bananas, egg whites, applesauce and cinnamon. Add dry ingredients. Mix together until completely combined and batter is smooth. Bake 350F for approximately 1 hour. You may add nuts, chocolate chips or fruit to this recipe for extra flavor- We love adding chopped up cranberries to it.

    These are really really yummy! Only cook for 20-24 minutes, that's all they need! Probably the best "healthy" muffin I have made in a long time! - 5/14/10

    These are really good--sweet and lots of banana flavor. I doubled the recipe and used 3 whole eggs instead of just whites (I hate wasting food), plus added some ground flax and vanilla extract. DO NOT cook for as long as it says--I did 19 minutes and that was still too long. Very yummy though! - 4/26/10

    41/2 stars. Really good. Made some mods (dictated by our cupboard): used white whole wheat flour, very scant 1/4 cup sugar; and baked as muffins. Twelve minutes at 350 was perfect. These look puny when you put them in the muffin tins but they rise and bake beautifully. Will make again! - 11/2/11

    Very Good
    This was very good, but needed more banana flavoring. I made this in a 5x9 bread pan and baked for 45 min. at 350. The bottom was a little dry, but it tasted very good. Will be making this again. - 1/17/15

    I made square muffins, so they look like little banana breads. They are a bit dry but have great flavor. I will probably add a little water next time I make them. I did have one warm o of the oven last night with a bit of butter. YUM! - 10/15/14

    I was disappointed with this recipe I made a double batch and put mini chocolate chips in half of the batter. Both batches came out very tough and dry. I did bake one batch too long, around 30 minutes but the next batch came out the same. Will keep searching for a banana muffin recipe. - 7/9/14

    I made the muffins. They taste really good but are a bit heavy. My yield was 12 regular muffins and 8 mini muffins. The mini muffins were light and airy. Scratching my head over that... The only addition I made was sliced strawberries. Overall, I'm pleased! - 8/19/13

    made the bread, came out very moist. I added 1/2 cup walnuts, and a zest from one orange, and used whole eggs. It has a wonderful aroma while baking. Can't wait for it to cool. - 7/23/12

    I followed the directions but I was using my spark recipes iPhone app and it doesn't have the comments. Whoever decided these had to bake for an hour is insane. I'm ashamed to admit that I baked them for 50 minutes. That's what I get for following the directions. - 10/30/11

    Absolutly wonderful. 20 minutes is perfect for the muffins but if I was doing the bread it would be 1 hour. Some sparkers have misunderstood the title thinking it is 1 hour for the muffins. - 10/22/11

    Good Stuff! I made it for my 1 year old to eat in the morning for a healthy breakfast. I added blueberries and used only wheat flour it tastes great! 25-30 mins was plenty of time to cook I think if they cooked longer they would have burned. - 6/15/11

    I used all whole wheat flour, 1 whole egg, 1 large banana, half of zucchini shredded, and about 1/3 cup of fresh blueberries, added tbsp. of ground flax seed and added an additional tbsp. of apple sauce. Very good! Not too sweet, kids loved them. - 2/14/11

    SO i doubled the recipe using 4 small-med (7in) bananas, and used splenda. Cooked 15 mins (muffin pans)They are heavier than your "typical" muffins, but taste great!! Made only 22 muffins (with 2tb batter each). My 6 yr daughter and 3yr son both LOVE them, so do I!! thank you for recipe - 10/14/10

    I really liked the taste of this bread, but I think I overcooked them. The batter is thicker than expected, next time I will use three egg whites and maybe a bit more applesauce. Even though my bread came out a bit gummy, the taste is awesome. - 6/5/10

    I used Splenda instead of sugar and added walnuts and vanilla. Also, I set the timer for 30 minutes based on other reviews. They were already overdone; I think 20-25 would do it. But they are still delicious! - 4/20/10

    These are wonderful. Very moist and tasty. I added a little bit of mini chocolate chips. One recipe note, the 1 hour bake time is only for bread, not if you are making muffins. For muffins do 20 - 25 minutes. - 4/18/08
