Introduction

I love this stew! It is so easy and leaves me feeling satisfied. I use 3/4 cup as a serving. If it is too spicy for you, substitute a can of diced tomatoes for one of the diced tomatoes w/chilies. Ingredients

    1 onion, chopped
    1 16-oz can black beans
    1 16-oz can kidney beans
    1 16-oz can corn (drained)
    1 8-oz can tomato sauce
    2 14.5-oz cans diced tomatoes w/chilies
    1 1.25-oz packet taco seasoning
    1-2 boneless skinless chicken breasts

Directions

Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving, remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese, sour cream, or tortilla chips.

    Excellent! I will make it again. Quick note though, when I measured out 1 cup servings it only came out to 8 servings, so I am having to go redo the nutritional information so it comes out correctly. - 2/13/09

    We love it! I have made it with chicken and ground turkey and both turned out yummy. For the beans I put in green beans (hubby does not eat beans) and it is very good. we serve it over corn chips with cheese and sour cream. - 2/20/09

    Oh my goodness! Ridiculously easy, and so delicious! Not at all spicy enough for me, though. I'll be adding some hot sauce and adding some canned chipotle peppers next time I make it. - 2/19/09

    Great tasting recipe. Made a few changes to go lower salt though. Use whole tomatoes just cut them up,rinse the beans from the cans, use low salt taco seasoning and cut the amount in half, i threw in cut up fresh whole mushrooms, and use 100% whole wheat pitas to dip. Cut them into triangles. - 1/19/09

    I didn't even slow cook this. I had rock-hard frozen chicken breasts. I put the chicken pieces and onions in a skillet. Put the canned stuff and taco seasoning in another pot to heat. By the time it was bubbling, the chicken was cooked. I cut it up and dumped it all together. Yum with sour cream!! - 2/6/09

    I will try this but am on a reduced sodium diet. I will sub frash frozen corn and the lower sodium taco seasoning. That should cut the sodium by a third. - 2/3/09

    This was really delicious. I added diced orange pepper and diced celery because I had some on hand. I'm sure without the extras, it is still delicious. I also started my fresh veggies in a pan on top of the stove to make sure they would be soft enough when the stew was done. - 2/13/09

    My husband LOVED this recipe. I was expecting more "taco" flavor so I might use more seasoning next time, but a reduced salt version, this was salty enough as it is! I would also recommend the longer cooking time as I did 3.5 hours on high and my onions were still crunchy (which I'm not a fan of). - 2/5/09

    This was just delicious! I didn't have canned tomatoes with chilis or canned corn so I added a cup of hot salsa for an extra kick and a bag of frozen corn. I served it up with some gluten free brown rice tortillas. Yummy!! - 1/30/09

    I made this last night and it was a HUGE hit!! My 1 year old even loved it! I am not a fan of tomoatoes, so I didnt add the toamatoes, so it worked well as a stew, and then as a filler in a toritlla, and today it will be great on my salad! LOVED IT! will DEFINATELY make again! 10*** - 1/25/09

    Instead of the taco seasoning, I used another recipe for taco seasoning on here to cut the sodium down quite a bit (to 347 mg). It tasted like it needed salt, but it was still very good. Even my 14 month old gobbled it up, and that's unheard of! Will def. be on our rotation of healthy meals! - 1/18/09

    This is delicious and super easy! Used 1/2 packet of taco seasoning, as suggested. I bought the low sodium and it was still pretty spicy (I have two little kids who are opposed to spice). Next time I will use mild seasoning and not worry about the sodium - 5/5/10

    I have cooked this recipe for almost a year now, taken it to potlucks and have always run out. Everyone loves it. I have served it with tortilla chips, as a dip, or cooked rice and heated flour tortillas to make chicken burritos. Same with corn tortillas (it helps limit the carbs).

    This is one of our favorites, with a couple of "tweaks". Our recipe has a packet of dry Ranch dressing seasoning, and we use chili beans instead of black beans. I also use yellow hominy instead of regular corn, and diced tomatoes instead of tomato sauce. It's great with jalapeno cornbread! - 3/31/09

    This sounds great and gives me another "Mexican" receipe to use. Altho I'll use ground beef since my husband doesn't eat chicken.     Too bland for us -- so added chili powder, liquid smoke, basil, thyme, oregano and fresh ground pepper. Next time will also add hot sauce & chipotle peppers. Leftovers good in an omelete w/ a dollop of fat free sour cream on top. - 3/6/09
