I love this stew! It is so easy and leaves me feeling satisfied. I use 3/4 cup as a serving. If it is too spicy for you, substitute a can of diced tomatoes for one of the diced tomatoes w/chilies. Ingredients
-
1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 16-oz can corn (drained)
1 8-oz can tomato sauce
2 14.5-oz cans diced tomatoes w/chilies
1 1.25-oz packet taco seasoning
1-2 boneless skinless chicken breasts
Directions
Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving, remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese, sour cream, or tortilla chips.

Great tasting recipe. Made a few changes to go lower salt though. Use whole tomatoes just cut them up,rinse the beans from the cans, use low salt taco seasoning and cut the amount in half, i threw in cut up fresh whole mushrooms, and use 100% whole wheat pitas to dip. Cut them into triangles. - 1/19/09

I didn't even slow cook this. I had rock-hard frozen chicken breasts. I put the chicken pieces and onions in a skillet. Put the canned stuff and taco seasoning in another pot to heat. By the time it was bubbling, the chicken was cooked. I cut it up and dumped it all together. Yum with sour cream!! - 2/6/09

My husband LOVED this recipe. I was expecting more "taco" flavor so I might use more seasoning next time, but a reduced salt version, this was salty enough as it is! I would also recommend the longer cooking time as I did 3.5 hours on high and my onions were still crunchy (which I'm not a fan of). - 2/5/09

Instead of the taco seasoning, I used another recipe for taco seasoning on here to cut the sodium down quite a bit (to 347 mg). It tasted like it needed salt, but it was still very good. Even my 14 month old gobbled it up, and that's unheard of! Will def. be on our rotation of healthy meals! - 1/18/09

I have cooked this recipe for almost a year now, taken it to potlucks and have always run out. Everyone loves it. I have served it with tortilla chips, as a dip, or cooked rice and heated flour tortillas to make chicken burritos. Same with corn tortillas (it helps limit the carbs).

This is one of our favorites, with a couple of "tweaks". Our recipe has a packet of dry Ranch dressing seasoning, and we use chili beans instead of black beans. I also use yellow hominy instead of regular corn, and diced tomatoes instead of tomato sauce. It's great with jalapeno cornbread! - 3/31/09
