Ingredients

1 cup brown rice
1 onion, chopped
1 cup mushrooms, chopped
1 cup green peppers, chopped
1/2 cup banana peppers, chopped
1 tbsp olive oil
2 tbsp hot sauce
1 tsp chili peppers
6 oz. chicken (boneless, skinless), chopped
Directions
Boil 1 cup of rice and set aside.
Fry 6 oz chicken, chopped, in frying pain combining olive oil, chili peppers, and hot sauce.
Once chicken is cooked add green peppers, onion, mushrooms, and banana peppers.
When veggies are cooked add the rice and mix together.
If you like hot food you'll love this! Especially if your counting calories.

Gumbo is a soup that begins with a roux (serving it over rice is a given). Some Louisianians add tomatoes, and/or okra but it's optional.My mama often added okra to her chicken or turkey and sausage gumbo but not seafood. But she enjoyed shrimp and okra gumbo.
