Introduction

Number of Servings: 2

Ingredients

    1 cup brown rice
    1 onion, chopped
    1 cup mushrooms, chopped
    1 cup green peppers, chopped
    1/2 cup banana peppers, chopped
    1 tbsp olive oil
    2 tbsp hot sauce
    1 tsp chili peppers
    6 oz. chicken (boneless, skinless), chopped

Directions

Boil 1 cup of rice and set aside.
Fry 6 oz chicken, chopped, in frying pain combining olive oil, chili peppers, and hot sauce.
Once chicken is cooked add green peppers, onion, mushrooms, and banana peppers.
When veggies are cooked add the rice and mix together.
If you like hot food you'll love this! Especially if your counting calories.

    Sorry, but this is not a gumbo recipe! It's more like a pan-fry. I'm sure it's tasty, but it has no relation to gumbo or Creole flavors of Louisiana...give it a new name and you'll set up expectations for the goodness it really is! - 12/9/09

    This is a stir fry; gumbo is a type of soup. Doesn't need to have okra (my Louisiana native husband hates okra!) but it does need some kind of roux. There are low-fat versions of gumbo. - 12/9/09

    I agree with comments, this is not anything near a gumbo, but looks good, sounds tasty and nutritional info is right in line for me and my diabetic hubby who also has high cholesterol. I am making it for dinner tonite because I have all the ingredients on hand - 1/25/10

    Gumbo is a soup that begins with a roux (serving it over rice is a given). Some Louisianians add tomatoes, and/or okra but it's optional.My mama often added okra to her chicken or turkey and sausage gumbo but not seafood. But she enjoyed shrimp and okra gumbo. Gumbo began as a way to use leftovers - 12/18/09

    To settle the clash.... no, this sounds tasty but is not gumbo. I will try it because it is full of veggies and would make a good lunch to take to work.

    Gumbo also does not have tomatoes in it. That would be sauce piquant or a coubillion. Okra is only put in chicken and sausage gumbo.

    With a little bit of southern hospitality, thanks for this recipe. It has been my experience that we all make various dishes that do not always equate to the same. There are lots of Louisianians who prepare a "gumbo" that is very different than one I would make. Enjoyment is the key! - 12/9/09

    What's in a name? Well . . . when you're searching for recipes, EVERYTHING. Gumbo has basic characteristics -- some of which are included here. If you're content to apply any title, as some suggest here, why not "Best Fried Chicken Wings," or "Mama Mia's Back Home Sauce." But I AM trying this!! - 2/24/10
