Introduction

More than just plain cheese, this pizza will wake up your taste buds. More than just plain cheese, this pizza will wake up your taste buds.

Ingredients

    • 1/2 cup sun-dried tomatoes, chopped
    • 1 15 oz. can great northern or navy beans, drained
    • 2 cloves garlic, peeled and chopped
    • 1/4 teaspoon dried oregano
    • 1 10 oz. thin crust pre-made pizza crust
    • 1 cup shredded fresh basil leaves
    • 1/2 cup shredded, reduced fat mozzarella cheese

Directions

1. Preheat oven to 425º F.



2. Place sun-dried tomatoes in a small bowl and pour boiling water over them enough to just cover and let stand for 10 minutes to soften them. Drain well, then chop into thin strips.



3. Place beans, garlic and oregano in a food processor. Cover and blend until smooth.



4. Spread bean paste over surface of pizza crust.



5. Sprinkle with sun-dried tomatoes, basil and cheese.



6. Place pizza on an ungreased cookie sheet or pizza pan and bake for about 10 minutes or until cheese is melted.



Serves 6.

    Very good! If you want something a little lower carb, I would recommend using La Tortilla Factory tortillas as the base instead. They only have 80 calories and tons of fiber! - 4/3/08

    I wasn't sure this would be very good, but it was amazing! My husband loved it!! The bean paste is not bland at all. I think it just depends on how big your garlic are. I had two really big ones and it almost gave it too much of a kick. Next time I am going to try to use smaller garlics. - 11/8/08

    I thought it was a little bland, like the bean mixture needed something else. I ended up putting a tablespoon of spaghetti sauce, which was ok, but I'm thinking of trying to mix in some pesto with the bean mixture next time. Otherwise, pretty good. - 3/21/07

    I love the sun-dried tomato and fresh basil, and I always love cheese, but the bean spread was a little weird for me. My husband enjoyed its texture, though. And it is definitely very filling. - 3/18/08

    I agree that the bean paste could use a little something extra. I also might try it with fat free/reduced fat feta rather than mozzarella. But definitely nourishing and interesting. - 9/19/07

    It had a good flavor, but it was a little too unusual for me. I wasn't used to the tastes and textures of the sun-dried tomatoes or fresh basil. The beans were OK though. - 3/17/07

    It's interesting... very filling. I went out of my comfort zone a little on this one. I don't think I like sun-dried tomatoes.
    You can use any extra bean mixture as a dip for pita or bagel chips!

    Cheated a little--added 2 TB of a prepared Pesto Rosso (sundried tomatoes, olive oil, garlic, parmesan). A little extra garlic, too. Sauteed portobello mushrooms and a bit of onion in olive oil, then topped with cheese. Rave reviews from my family. Would try it with green pesto for the puree too - 4/26/12

    I really liked thisl, even though I'm normally a pizza purist (tomato sauce and cheese only). I did modify it a little the second time I made it: I doubled the cheese and only used half a can of beans. I thought the "sauce" was a little overwhelming the first time, and the cheese a little skimpy. - 3/22/09
