Very good! If you want something a little lower carb, I would recommend using La Tortilla Factory tortillas as the base instead. They only have 80 calories and tons of fiber!
I agree that the bean paste could use a little something extra. I also might try it with fat free/reduced fat feta rather than mozzarella. But definitely nourishing and interesting.
