Ingredients



    Portabella Mushrooms, I whole
    Ground beef, extra lean, 4 oz
    Zucchini, baby, 1/4 cup
    Mushrooms, fresh, 1/3 cup
    Onions, raw, 1/4 cup
    Tomato Paste, 1/4 cup
    Canned Tomatoes, 1/4 cup
    *Extra Virgin Olive Oil, 1/2 T.

Directions

Use a bit of olive oil to grease baking dish.
Saute onions in remaining olive oil.
Brown beef, add mushrooms, zuchinni, canned tomatoes and 1/4 can of tomatoe paste. Add 1/2 cup water and fresh herbs like oregano and basil, add cracked pepper.

Easy to convert to 4 servings but using 1 pound of beef and full cans of tomato and paste, etc.

Once the mixture is cooked completely put the meat mixture onto the large mushroom. Bake at 350 for 15 minutes to cook portabello.
