Ingredients

    2 TBS olive oil
    1/2 cup Onions chopped
    12 oz. Mushrooms,chopped
    7 cloves Garlic
    1/4 tsp Pepper, black
    3 TBS Cilantro
    3/4 cup Bread crumbs, dry
    4 TBS Cilantro
    1/2 cup Milk
    2 TBS olive oil
    3/4 tsp pepper
    6 boneless, skinless Chicken Breast, butterflied and flattened slightly

Directions

Saute onion in hot oil in a skillet over med-high heat.
Stir in mushrooms, garlic, salt, and pepper; cover and cook 3 minutes. Uncover and cook, stirring occasionally, until liquid is evaporated.
Stir in cilantro. Transfer mixture to plate and let it cool.
Place one-sixth of filling in the center of each chicken breast; fold edges to center to completely cover filling.
Combine bread crumbs, oil, cilantro, & pepper. Dip chicken in milk and dredge in breadcrumb mixture, coating well. Place, folded side down, on baking sheet.
Bake at 400 degrees for 20-25 minutes or until done.

Serves 6 very well (stuffed breasts are very big!) You can easily share on breast with another person.

    After all the great reviews I was a little bit disappointed by this recipe. I thought that the outside flavors were pretty good but it would have seriously benefited from a marinade because the flavor didn't go through the meat. The inner meat was pretty tasteless. - 6/25/14

    I loved it. I'm a beginning cook and didn't know that you have to flatten first then butterfly. If you do it the other way around, the cut you make disappears from pounding the meat. I ended up rolling up the chicken and securing with a toothpick, cooked for 26 minutes and it was quite tasty. - 7/26/10
