Ingredients

    3 large eggs
    1 packet of Splenda
    1 dash salt
    1 pinch cream of tartar
    3 ounces cream cheese

Directions

This recipe comes from Cleochatra's "The Lighter Side of Low Carb" blog. There is a lot more about these rolls there, including a recommendation for special pans to cook them in.

Preheat oven to 300 degrees.


Separate the eggs and add Splenda, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together.


In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture).


Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites.


Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.


Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.


Makes 6 @ about 85 calories a piece, >1 carb per.

    Removing them from the cookie sheet I took a little nibble. I thought yuck these people have lost their tastebuds! I let the rolls cool and placed them in a zip lock bag .This afternoon I decided to make myself a burger and used the oopsie roll. IT WAS GREAT! Something happens while they sit. - 6/19/08

    I made these but left out the splenda which I didn't feel they needed. They were delicious and will be a staple for me from now on...the recipe is so versatile. Have joined this great site as there are so many recipes I can put to good use! - 9/20/10

    I'm surprised when people on LC diets change recipes to lower fat. LF products nearly always have more carbs. Calories matter, but not as much as the spikes in blood sugar from carbs. One user thought that Cleochatra's site says "6 Net carbs," it doesn't it says 0.6 net carbs. Big difference. - 11/17/12

    I was apprehensive at first but I'm glad I tried this. It helped me get through bootcamp. Mine were a little flatter than the ones in the picture but they make a great turkey sandwich. I'm about to go make more. Thanks for sharing. - 2/28/09

    Thank you, ever so much! I do add parmesan cheese and sometimes Psyllium fiber for a firmer feel to the roll. It is so versatile.Sometimes sweet with S/F jam,Sometimes savory to go with roast beef+mayo. Thanks again + again!!! - 1/1/12

    Love these! Taste good with everything. I found that they are higher calorie than the low-cal fiber breads, but MUCH more satisfying. They don't leave you hungry. My fave is to make a little egg salad to top them with. Or make cinnamon toast. Cheese toast. French toast...see a pattern here? - 3/22/08

    These are so good! I made without Splenda. I just added some salt and a few mixed herbs and sprinkled with Parmesan before baking. Just tried one with crispy bacon, mayo, spinach, cheddar and black pepper and it was divine! - 5/22/13

    FANTASTIC! I used LF cream cheese to lower the calories to 45/roll. 4 TWO TIPS: 1) Whip the egg whites until you can just about turn the bowl upside down without it sliding. 2) Add yolk mixture to the egg whites a little bit at a time. I add it a little bit at a time to 3 total times. - 2/18/12

    Turned out really well. Glad I read all the previous comments. I whipped the heck out of the egg whites for 10 minutes and folded in the yolks like I had severe arthritis. My DH had a BLT and a grilled cheese sandwich in one evening! Definitely a go-to bread recipe. - 5/1/12

    These were awesome. I made bacon and fried egg sandwiches with them for my first day of Atkins and they were amazing! I thought, "these oopsie rolls are going to help me get through this diet!" Also, my 2-yr-old couldn't stop eating them. He ate 2 whole plain rolls and asked for more. - 7/13/11

    These are amazing!!!. I just had a fried egg, ham and cheese and it was fantastic. And NO CARBS, (or barely)I added garlic powder, dried parsley, and sprinkled some parmesan cheese on top before I baked them. YUMMMM - 11/15/10

    The only thing I know about cooking is how to turn on a microwave, so this was a bit of a challenge. My first batch turned out extremely runny (still tasty though!) - I think I didn't whip the eggs long enough maybe? Try, try again. - 4/10/10

    I made these the other night with our turkey burgers. I sprinkled the tops with a little ground flax meal for extra fiber. My husband, a tried and true Atkins fan absolutely loved these!     Not sure how to use this as a bread substitute...
    Has the texture of a marshmellow and tastes really peculiar, like what you would imagine eggs with cream cheese to taste like! Not bad, but I guess I don't have a huge need for lowcarb bread substitute with high cholesterol...
