A few fresh chives turn a picnic and potluck favorite into football-shaped snacks.

Number of Servings: 12

Ingredients

    6 large hardboiled eggs
    3 T fat free mayonnaise
    1 t Dijon mustard
    1/4 t black pepper
1 t dill pickle, chopped fine
    1 t pickle juice
    1 T celery, chopped fine
    1 T parsley, chopped
    4 chives

Tips

Use light mayonnaise if you prefer that, or swap sour cream for the mayo. Her serving size is two halves, which will make a satisfying afternoon snack!

If you want to lower the calories even more, only mash four of the egg yolks. You'll save 20 calories and a gram of fat.

Directions

Cut each egg in half and remove yolks, placing them in a large bowl. Using a fork, mash the yolks until they are small, uniform, and granular. Then add the remaining ingredients. Stir to combine, and scoop or pipe with a piping bag back in to egg halves.
Snip the chives into the shape of football laces and arrange atop the eggs.

These were good but I like the no sugar added sweet pickles instead of the dill pickles. Next time I think I will change the type of pickle. - 6/18/20
