Introduction

- 1 lb. dry red beans
- 2 quarts water
- 1 1/2 cups chopped onion
- 1 cup chopped celery
- 4 bay leaves
- 1 cup chopped green pepper
- 3 tablespoons chopped garlic
- 3 tablespoons chopped parsley
- 2 teaspoon dried thyme, crushed
- 1 teaspoon salt
- 1 teaspoon black pepper
Directions
1. Pick through beans to remove bad beans; rinse thoroughly.
2. In a large pot combine beans, water, onion, celery, and bay leaves. Bring to a boil; reduce heat. Cover and cook over low heat for about 1 1/2 hours or until beans are tender. Stir. Mash beans against side of pan.
3. Add green pepper, garlic, parsley, thyme, salt, and black pepper. Cook, uncovered, over low heat till creamy, about 30 minutes. Remove bay leaves.
4. Serve with hot cooked brown rice, if desired.
Yield: 8 servings--Serving Size: 1-1/4 cup

I am from the New Orleans area and do some things differently. First, I would soak the beans overnight making them softer and less time to cook. Second, I use basil and oregano instead of the thyme. Can be cooked in a crock pot. Just throw everything in the pot and let cook for 8 hours or more. - 5/6/08

This was more watery than I expected and I hadn't read the comments so I hadn't soaked the beans so they took a long time. I like things spicy so I added some red hot, cumin, cayenne, hot pepper flakes, chili powder and substituted cilantro for the thyme (skipped parsley). I mashed the beans also. - 8/17/09

Oops! A whole jar of red pepper flakes poured into this, so I fished out as much as possible. Oh what a burn it still had. We liked them and I will cook them again. It came out more like a soup, but I did not measure the water. Recipe did not mention to presoak beans overnight. Veggies good. - 7/20/09

I found this dish to be very bland. It definitely needs some added seasoning or the addition of maybe turkey smoked sausage to up the flavor without too many added calories. A can of green chilies or maybe some creole seasoning. And definitely soak your beans overnight to make sure they're softened! - 5/21/09
