Introduction

Ingredients

    • 1 lb. lean beef (top round)
    • 3 teaspoon vegetable oil
    • 3/4 tablespoon finely chopped onion
    • 1 lb. sliced mushrooms
    • 1/4 teaspoon salt
    • to taste pepper
    • 1/4 teaspoon nutmeg
    • 1/2 teaspoon dried basil
    • 1/4 cup beef broth
    • 1 cup plain low-fat yogurt
    • 6 cup cooked macaroni, cooked in unsalted water

Directions

1. Cut beef into 1-inch cubes. Heat 1 teaspoon oil in a non-stick skillet. Sauté onion for 2 minutes.



2. Add beef and saute for additional 5 minutes. Turn to brown evenly. Remove from pan and keep hot.



3. Add remaining oil to pan; saute mushrooms.



4. Add beef and onions to pan with seasonings.



5. Add beef broth, yogurt; gently stir in. Heat, but do not boil.

Makes 5 servings.

    We didn't like this at all. Very bland. Like above comments, needs a different cut of beef, WAY to many noodles and the sauce curdled. Gross. - 5/12/08

    Thank you for this recipe. I was looking for a Stroganoff recipe to use yogurt to go with the small amount of sour cream I had left. I used buffalo instead of beef and noodles instead of macaroni. And used a crockpot, The smell was great the taste was great. - 6/14/10

    Will probably make this again. I didn't find it bland. I let the beef broth cook down some and used a large onion (gave it more flavor I think). I used fat-free sour cream instead of yogurt and took the advice to add at the very end. Top round was too tough. Used whole wheat egg noodles. - 12/30/08

    I thought it was pretty good. Sauce a little runny, but hey it's low fat. I used Kluski noodles in place of the macaroni - 4/29/08

    This was a failure on all counts! Top round is too tough. I think there must be a typo for the onions - 3/4 teaspoon? The yogurt curdled - nasty! Way too much macaroni for the little bit of sauce. - 1/11/08

    Try Fage Total 0 or another fat free Greek-type yogurt for thickening. I use it in place of sour cream all the time and LOVE the results! Also, I increased the onion and used freshly ground black pepper and eliminated the salt. S-L-O-W cook this and add yogurt at the end and you'll find the flavor! - 1/2/08

    My husband and I really enjoyed this. I followed the recipe exact except for adding garlic and Paula Deen seasoning for some added flavor. I used the greek plain yogurt and the sauce was a good consistency. If u have trouble with the sauce being runny you can always add a touch of flour to thicken. - 1/7/11

    Increase onions, I always add minced garlic. Need better cut of meat. Limit salt to 1/8 tspn. I use egg noodles. - 5/12/08
