Introduction

I used to make a similar recipe that I found in a Campbell's Soup Cookbook for my Mom and sisters as a teenager. Since I love having a crock pot I thought I would throw everything in and see how it turned out! It's stewing away and is making the house smell delicious right now! Ingredients

    3 Chicken breasts
    1 bunch broccoli
    1 small onion
    1 red pepper
    1 1/2 cup long grain brown rice
    2 cans Cream of Chicken Soup - 98% Fat Free Free
    2 cups Chicken Broth
    1 tbsp chili powder

Directions

Cut up the chicken and the vegetables as small as you wish. Throw everything into the crock pot and cook on high for about 4 hours.

    Very good! I used 1 can cream of mushroom and one can cream of celery instead of the cream of chicken soup. I would make it again, but next time, cook rice separately and serve chicken over it. The cook time is too long for the rice, I think. - 7/17/10

    I just made this and really like it! I made it exactly as described, and didn't have any problems with it being soupy. It is nice and thick and tasty! :) - 12/30/08
