Introduction

Number of Servings: 12

Ingredients

    1/4 cup butter
    1 cup sugar
    2 eggs
    3 large bananas
    1 1/2 cups flour
    1 tsp baking soda
    1 tsp nutmeg

Directions

Makes one standard loaf size, approx 12 servings (slices).

Cream butter and sugar. Add beaten eggs and bananas. Add sifted flour, soda and nutmeg. Mix well.

Pour into greased loaf pan and bake at 350F for 50 minutes. Toothpick inserted into center should come out clean when loaf is done.

Optional: add a piece of parchment paper cut to the size of the bottom of your loaf pan to make removal easy, guaranteed!

    FANTASTIC! I subbed 1/2 the white sugar for brown sugar, no nutmeg, and added 1/2 tsp cinnamon and 1/2 cup chopped pecans. It made 6 jumbo muffins. - 1/30/09

    Ive made this recipe twice the bread turns out so beatiful and moist i add one tsp of vanilla for a lil something different and usesd a tsp of cinnamon it tastes so good my son and my hubby loves this recipe!!! - 12/2/08

    I am on a low carbohydrate diet. Any suggestions around reducing the three bananas? Sugar substitute works and really reduces the carbs. Would a single banana and banana flavouring do the trick? Or would something else have to be added. Tastes great but I can only eat 1/3 slice! - 1/30/09

    I'm not really sure Dametemplar... the bananas really add structure to the bread. You might have to search the web for "low carb banana bread" to find another recipe that would fit your carb needs. Let us know what you find!

    You can use splenda instead of sugar and also add 1/2 cup brown sugar splenda...also add raisons and walnuts!!!Loved this recipe - 9/25/08

    No sugar, used Maple Syrup instead (not much needed with super ripe bananas)
    No eggs
    Added Flax = nice nutty flavor
    Added a little vanilla and cinnamon in addition to the nutmeg

    I wonder why so many recipes on here use white sugar instead of Splenda?? Seems strange on a health site. I can understand it inside women's magazines. - 3/3/09

    Thanks for commenting Ethelmerz :) Not everyone who is interested in health and weight loss finds sugar to be a challenge and some people prefer not to consume any artificial sweeteners... generally I find that if you're a Splenda-fan (I am!) then you can subst. at will! :D

    I made this today and it tasted great! Instead of butter I used heart smart tub margarine and I used 1/2 tsp of nutmeg and 1/2 tsp cinnamon instead - 1/3/09

    Delicious. Everyone in my family loved it. However, if you don't like the herby smell of too much nutmeg, it might be good to reduce the amount. Otherwise great recipe. It's a keeper for sure and will make it again. Thank you - 12/13/08

    I like this bread. I made it with 1/2 brown sugar and 1/3 of the flour I used whole grain. The only problem is the calories...it's pretty high. Next time I will use an applesauce recipe to cut some fat. - 9/17/12

    Wonderful! I used Splenda instead of sugar, smart balance for the butter, and replaced half of the flour with white whole wheat flour. I also added a tsp of cinnamon and a tsp of vanilla. I had to cook it in a star shaped pan, because my sister doesn't have a normal one. - 5/15/12

    Very good and extremely easy to prepare. The Recipe makes one loaf, doubled it to get two loaves. I did add cinn and nutmeg, used 3 large bananas and only 3 eggs. turned out wonderful! My DH isn't one for breads like this, but we've eaten half a loaf already! I'll change Ingred up for variation. - 10/31/10

    OMGoodness.. Delicious! I used Splenda Zero Calorie sugar and cinnamon but I forgot to add vanilla like some of the other posters suggested. I didn't have regular flour so I used Bread Flour (like the kind you'd use for Bread Machines), they came out fabulous. This recipe is a keeper for sure! - 9/1/10
