Introduction

I can't take credit for this wonderful recipe, it came from a friend of mine. This is a super easy, great tasting dish, cheesy, spicey, and loaded with chicken YUM! Ingredients

    4-6- boneless, skinless chicken breasts (I use 4)
    1- 32oz box, Velveta (2% Milk kind)
    1- Stick, I can't believe it's not butter light
    1/2- Fresh Onion (I used red onion)
    2- Cans Rotel tomatos (I use regular) If you don't have Rotel available other brands of diced tomatoes with onions and chilies will work fine.
    2- 16oz boxes Barilla Plus Spaghetti or Macaroni (I use the Macaroni)
    1- can Campbell's Healthy Request 98% Fat Free Cream of Mushroom
    3- cups Great Value Fiesta Blend Shredded Cheese (more or less to taste)

Directions

24 Servings - 2 9x13 pans
(I've never measured the recipe to see exactly what a serving size should be, I just try to make all the pieces the same size.) I'm guessing 1-1.5 cups per serving would be pretty close.

Heat oven to 350

In large pot with lots of water boil chicken until done, remove chicken.
Add noodles to chicken broth and boil until tender. Stir so they don't stick together.
Shred chicken and place in large bowl
Cut Velveeta block in half and microwave until begins to become liquid (stopping to stir occasionally) add both cans of Rotel and can of Cream of Mushroom continue microwaving until completely melted.
Chop onion, and place in microwave safe dish with the stick of butter, until butter is melted.
Drain Noodles and add them to chicken, add butter mixture to chicken, add Velveeta mixture to chicken. Stir
Pour into 2 9x13 pans, top with shredded cheese.
Bake for 30 min. or until cheese is melted and brown on top.

    This definitely made alot of food. Next time I would cut the recipe in half, or if I did use the full recipe I would add another piece of chicken. There was not enough meat in this dish. - 9/13/07

    Chefathheart, Rotel is a brand of spicy diced tomatoes. I'm sure stewed would work fine too. This is great for the kids, we all love Velveeta! - 8/20/07

    What are rotel tomatoes? I live in Canada and have never seen them. Would they be the same as spiced stewed tomatoes?

    Incredible!
    This was so great. It tasted like a hyped up version of chicken spaghetti. I halved the recipe which made way more than enough for us. I accidentally used extra hot rotel...not advised; it's really hot! (DUH!) - 8/16/07
