Introduction

A delicious vegan alternative to chocolate cream pie- it's so rick, you only need a small slice. A delicious vegan alternative to chocolate cream pie- it's so rick, you only need a small slice.
Number of Servings: 12

Ingredients

    1 graham cracker pie crust- ready made
    1 box Mori-Nu Lite Silken Tofu, Firm.
    1.5 cups Semi-sweet chocolate chips (you could substitute carob, bittersweet or mil chocolate, but the nutritional information is based off semisweet chocolate)
    1/4 cup strong, black coffee
    1T vanilla extract
    1 Cup fresh raspberries (or strawberries are delicious, too)

Directions

Makes 10-12 servings, no baking neccesarry.

15 minutes to prepare, 1-2 hours to chill and set.

1. Melt chocolate chips in the top of a double boiler or in the microwave. In the meantime, blend the silken tofu in your blender or food processor until smooth.

2. Add chocolate, vanilla, and coffee to blender and precess until smooth and uniformly mixed

3. Pour into pie crust and chill, covered for 1-2 hours (or over night).

Top with fresh berries and shaved chocolate (optional, not included in calorie count)

This is fabulous as an end to Thanksgiving Dinner.

    Oh my goodness out of this world good! I don't like coffee so I used vanilla soy milk instead. Excellent. No one knew my pie was tofu. - 11/6/08

    Alton Brown makes this, except instead of coffee he uses a 1/4 cup of Kahlua. It is the best ever, but the no calorie black coffee is probably a better solution if you're counting calories. - 2/23/13

    Incredible!
    This is chocolate heaven! I use almond milk instead of coffee and stevia sweetened chocolate chips to reduce the sugar. Also, having it as just a mousse without the pie crust makes it even more calorie friendly. - 5/3/21
