Number of Servings: 8

Ingredients

    2 Tbsp. olive oil
    2 Medium Onions, chopped
    3 Large Cloves Garlic, minced
    4 Celery Ribs, chopped
    2 Medium Green Bell Peppers, chopped
    6 Tbsp. Tomato Paste
    1/2 tsp. Dried Red Pepper Flakes (or more)
    1/2 tsp. Oregano
    1/2 tsp. Thyme
    6 Cups Chicken Broth (Fat Free will reduce
    calories)
    1 1/2 Lbs. Shrimp, peeled & deveined
    4 Cups Cooked Rice (Brown Rice will increase
    nutritional value)

Directions

Heat oil in large pot. Add vegetables & garlic; saute until veggies soften, about 5 minutes. Add next 4 ingredients; saute until fragrant, about 1 minute. Add chicken broth; bring to boil and cook over medium high heat until thickened, about 30 minutes. Add shrimp; simmer until shrimp are opaque throughout, about 4 minutes.

Serve over rice.

    This was awesome, as good as any I've had in New Orleans restaurants! I did add additional oregano and a little less broth for thickening, and I used vegetable broth since my husband doesn't eat poultry. Loved it and will make it many more times! - 11/12/09

    While I was cooking this, the smell made me not so sure I would like it. I loved it though. I cut all ingredients in half and used only 2 1/2 cups for Veg Broth. - 1/5/12

    My picky 10-year old loved it, as did we. I lowered the broth by a cup and that helped it to thicken up. Using fat-free and low-fat ingredients didn't make it any less of a fantastic dish. Thanks for sharing! - 9/5/10

    I made this for my supper, by dividing the ingredients by 8 to get 1 serving size. I had all the ingredients on hand already so that was a plus. Doesn't take 30 minutes to do when making 1 serving. Delicious! Will be adding this one to my favorites list! - 4/14/10

    i spiced it up a bit by doubling the red pepper, adding a tsp of cayanne and using hot thai peppers and double the garlic--makes it a bit more authentic and with considerable kick, but this was great an sooo simple! - 11/24/08

    I have been craving a seafood dish even though I am NOT a seafood fan. I think my body needed it or something. Anyway, I decided on this one. i really wasn't sure what to expect, but I was ASTOUNDED at how good it was! Even my kids ate it. They don't eat anything! We wil make it again. - 10/22/08
