Introduction
This is an awesome vinaigrette that gives a nice counterpoint to the paprika on the chicken. Ingredients

1 10.5 oz can mandarin oranges in juice, drained
4 T crushed pineapple in juice
1/4 cup orange juice
2 T lime juice
1 clove garlic, minced
2 T balsamic vinegar
1 pound boneless, skinless chicken breasts
salt (to taste)
pepper (to taste)
paprika (to taste)
Directions
For vinaigrette, combine juices, vinegar, garlic in a small bowl. Add oranges and pineapple. Refrigerate while you do the rest of the meal.
Cut chicken breasts into pieces that will cook quickly. Sprinkle with paprika, salt, and pepper to taste. Spray a skillet with olive oil cooking spray, cook chicken for about 5 minutes on each side, until browned. Lower heat and add liquid part of vinaigrette. Cover and simmer for 10 minutes or until chicken is cooked. Add remainder of vinaigrette and cover until just heated through.
