This was beyond excellent! I used olive oil instead of butter, about 2 teaspoons of cinnamon, and the same amount of brown sugar and shook it all in a gallon size bag before baking. Quick, easy, and filling! Even my picky 6 yr old loved it. - 10/28/10

This is such a simple recipe, but has the perfect blend of flavors. The hardest part was peeling the squash. Have added it to my favorite recipes - 11/15/12

I've not prepared butternut squash before. I didn't have enough time to bake it, so I halved the squash, added about a half inch water, covered with plastic wrapped and microwaved it. It tasted really good, and I'm sure it would be even better baked, which I will do next time. A keeper. Thanks! - 4/1/09

Yum!. I used very little butter or sour cream and a touch of cinnamon. The squash is good alone. - 2/24/09
