Introduction

Ingredients

    Cooking Spray
    2 1/2 c. cooked brown rice
    1 1/2 T. low fat butter
    1 - 1 1/2 c. 1% milk
    1/4 c. sugar
    cinnamon and sugar to sprinkle

Directions

Spray a large, microwave safe bowl with cooking spray. Add rice and milk to bowl. Bring to a boil in microwave (approx. 5 mins on high). Reduce to medium low heat, cook and stir at a time until milk is mostly absorbed by rice and the mixture is about pudding consistency. Add butter, cook 1-2 more minutes on medium-low heat in microwave. Stir in sugar, mix well. Serve sprinkled with cinnamon and sugar.
