Introduction

I was making french toast this morning and realized I didn't have syrup. I used banana instead and it was great! I was making french toast this morning and realized I didn't have syrup. I used banana instead and it was great!

Ingredients

    1 large egg
    1/4 cup skim or 1% milk
    2 slices whole wheat bread
    canola cooking spray
    "scrape" of margarine/spread (I use Brummel & Brown)
    1 medium banana

Directions

Spray a skillet with canola cooking spray and heat to medium. While skillet is heating, crack egg in bowl and gently wisk with fork. Add in milk and cinnamon (I just estimated the amounts--eyeball it). Skillet is ready when you sprinkle water on it and it sizzles. Put bread in mixture, one at a time, flipping over 2 or 3 times to make sure it absorbs enough of the egg mixture. Then place on skillet. Cook until brown.

Place on plate, scrape a bit of margarine over each slice of bread. Slice banana over french toast. Sprinkle more cinnamon if desired. Who needs syrup?

Makes 1 serving with 2 pieces french toast and one whole banana. Can easily be halved--just use one piece of bread and 1/2 a banana. You could also use skim milk and lower calorie bread to decrease the fat and calories of this recipe.

    This is a great quick breakfast, I will usually go one step more that makes it SO YUMMY, as soon as french toast is done,remove to plate and keep warm for a minute. to the pan add 1 sliced banana and sugar free surup and warm thru then pour over french toast.
