Ingredients

    3 tbs(1/4cup) flax seed meal
    1/2 tsp baking powder
    1tsp splenda
    1tsp cinnamon
    1large egg
    1tsp butter.

Directions

Put the dry ingredients into a coffee mug.Stir.Add the egg and butter,mix well.Microwave on high for 1 minute(or more).Take out slice and serve with butter.

    Yum. I love this quick and easy muffin. I left out the butter and added an egg white instead. I have also tried it with raisins added. Very good and the last time I had it I cooked it and then topped it off with No sugar added cherry pie filling. - 2/13/10

    I made this and enjoyed it very much. I changed the egg to egg whites and substituted erithryol for the Splenda. It was a good follow up to my dinner. There was just a hint of sweetness and the cinnamon gave it really good flavour. - 10/18/18

    I'm on a gluten-free diet and its been difficult to find edible bread. For this recipe, I didn't have splenda, so I used a teaspoon of honey. It tasted amazing and I couldn't believe how fast and easy it was. - 7/1/10

    Amazing. I used 3T (not 4T/.25C), 1/2t cinnamon, and light olive oil instead of butter. 1 minute was perfect for cooking. I can't believe such a perfect bread/light & fluffy muffin was so easy -- and healthy. Thank you very much!! - 11/15/12

    Really good! Tried loads of low carb/low fat/low whatever microwave cakes & things, this is actually worth doing. I can see a lot of room for variations, too. Cocoa instead of cinnamon [I used pumpkin pie spice], coconut oil instead of butter, mix up a little cream cheese/splenda/milk for a spread! - 5/30/12

    I made this without the butter or the cinnamon. I did put in 10g of 'no added sugar' strawberry jam in bits for flavour. I ate it for breakfast - with s/free ice cream - DELICIOUS! - 8/8/09
