Easy, healthy fave that will get the kids to eat their spinach!! Easy, healthy fave that will get the kids to eat their spinach!!
Number of Servings: 1

Ingredients

3- Bonelss, skinless chicken breasts-diced into cubes
    1c- chopped onion
    3- cloves garlic, minced
    6- carrots julienned
    1c- chicken broth
1- bunch fresh spinach, stems removed
    cooking spray

Directions

Cut chicken breasts into cubes, or bite size chunks, mince garlic, and chop onion. Add onions, garlic and chicken to hot skillet coated w/cooking spray. Brown chicken all around, pull out of pan. Add carrots to skillet. Coat w/garlic and onion, add chicken back to skillet. Reduce heat, cover and cook 15-20 min until chicken is done and carrots are soft. Remove carrots and chicken from pan. Set aside. Add chicken broth to skillet and boil to reduce (2-3 min.) Put liquid mixture into blender.--Caution--liquid is very hot and will cause top of blender to come off. I cover w/towel to keep secure and avoid splattering.
While liquid is blending, put clean, dry, spinach in medium saucepan, cover and cook on medium heat 2-3 min until just starting to wilt.
Place spinach on plate, arrange chicken and carrots on top and pour sauce over.
Very delicious, even my kids eat it. A household favorite for sure!!

    Incredible!
This was delicious! I was a little dubious about the spinach part (before I ate it), but it was just right. This is definitely a keeper. - 8/22/10

    Incredible!
    2 Thumbs up!!!!
Only problem that I faced was that I was not sure how to separate the onion from the carrots. I think that the next time I cook this I will use 1/2 of the onion in with the chicken and carrot and then for the sauce use the rest of the onion.

    Very Good
Really good! I did this without the spinach, only because I didn't have any on hand, and it was still so good. Will definitely have again, this time with spinach! - 2/25/09

    Very Good
This was really really good. Wasn't quite sure how to pick out the carrots and leave the onions in the pan but I got most of them out with the chicken. I'll definitely be making this again. - 11/20/08

    Very Good
I thoroughly enjoyed it - just changed up the cooking a bit. Didn't cook the spinach separately-just steamed it on top of the rest of the food at the end. Also didn't separate the food for the sauce, used the whole can of broth and 1 T. cornstarch and it thickened up just enough. Yummy! - 6/5/07
