Ingredients

    Oat Bran, 2.25 cup
    Baking Powder, 3 tsp
    Maple Syrup or sugar, .25 cup
    Milk, nonfat, 1.25 cup
    *Egg white, 2 serving
    Banana, fresh, .75 cup, mashed
    Almonds, .5 cup, chopped
    (optional: handful of rasins or blueberries and .25 cup of shreded coconut)

Directions

Combine dry ingredients in mixing bowl, blend wet ingreedinets together and mix gently with dry ingredients. Bake at 450 for 12-15 minutes for muffins or 10 minutes for muffin tops

    I have no problem with "healthy" recipes - but they should taste good too. I made them exactly per the recipe. If you've never tasted horse feed, that's what these taste like. Worst muffins I have ever made/had. - 6/20/10

    VERY healthy b/c it's made w oat bran, low sugar- I like that it doesn't use white flour. Good hearty texture, mild pleasant taste. I used thawed frozen blueberries and Eggbeaters & it came out great! I'd add a little more sugar or applesauce next time, or it's good w flavored crm cheese on top. - 10/4/07

    Very Good
    I hate eating oatmeal in the morning-this is a great alternative. Hate chewing on nuts so I grounded them to fine powder. First time I didn't have to decrease the amount of sugar in a recipe. Indulged a bit-used milk and egg since we are not using butter at all. Drizzled a bit of honey on top. YUM! - 4/4/12

    Just reading a few comments here that have subbed splenda for the syrup/sugar. I would personally suggest against using Splenda. It is a man-made chemical and your body would be better off just having plain old sugar! Trust me on this, trying to eat more naturally will definately be healthier. - 2/2/11

    This was pretty good. Obviously it is healthy and not a "junky" muffin! Because I didn't have some of the ingredients, I substituted whole wheat flour for the bran flour, 1% milk for the non-fat, and walnuts for the almonds. I also used dried cranberries instead of blueberries or raisins. Yum! - 3/8/10

    These were excellent!! I substituted Splenda for the maple syrup/sugar and they turned out fantastic. I added blueberries too which made them even better. You can always add more Splenda if you like them a bit sweeter. This will become a staple at my house. - 8/17/09
