Ingredients

    3 boneless skinless chicken breast
    2 cup (uncooked) white rice
    1 can low-fat cream of chicken soup
    1 can low-fat cream of mushroom soup
    1 tbsp minced garlic

Tips

If you like jalapenos, they taste great on the side!


Directions

In a slow cooker, cook your chicken breast and garlic on high, for 4-6 hours in 4.5 cups water. When chicken is done, shred and put back in cooker( do not drain water) . Add rice and let cook for 20-30 min or until rice is done. When rice is done, add soup and let cook for 15 more minutes. Makes 6 one-cup servings.

    I used brown rice (didn't have white) and made a few adjustments. I uped the garlic, added sliced onion, and lemon pepper seasoning. I also threw in some peas and carrots for added veges. Turned out delicious! Will make again for sure. Thanks for posting! - 1/7/09

    It looks like mush, but tastes pretty good. My rice also took FOREVER to cook; I'll cook it separately next time. I also got 9-10 servings instead of 6. I added some broccoli&cauliflower, but I think peas would have tasted better. - 7/20/09

    Made today
    Added a little rosemary chicken season and some lemon juice.
    Also I use 2 cans of cream of chicken soup, cuz I cant have mushroom soup. I put it in a baking dish added some mozz cheese to the top of half of it for the kids and melted in a heated oven of 400 for about 8 minutes.

    I substituted brown rice and strained the broth pior to adding the shredded chicken. This caused the broth to cool down and take longer than 30 minutes to cook the rice. It seemed to make more than 6 servings. Prob 9 did add 4 chickenbreast vs 3. It was good. served with salsa - 3/30/08

    It was was very easy to fix. I had plan to add veggies, it cooked to fast and when I made it home from work it was over cook and I didn't add the veggies. Even over cooked it was tasty! - 6/17/09

    What a great and EASY meal! I did tweak it a little by substituting brown rice for white and I added a bag of frozen (thawed first) soup vegetables. It was a one pot meal! My fiance LOVED it! - 4/29/08

    I made this for my husband tonight and we loved it! I altered the recipe a little bit based on some of the comments. I added some spices to combat the blandness, and I cooked the rice separately and added it in at the end to avoid sogginess. Worked out great! - 10/3/09

    I only used 2 chicken breast because there are only 2 people to eat in my house and I added an onion soup mix. It is really good. I like how the cream of chicken and cream of muchroom make to nice and creamy. I will admit that it dose kinda look like mush, but it taste really good so who cares. - 8/27/09

    I added a 160 g cebolla/onion cub. 1500 mg of sodium (my bad I know but I don't do bland). I also add frozen veggie to off set the naughty sodium. Came out okay. Let's see if I manage to eat most of it during the week. That is always the test... how much ends up in my stomach versus the trash? - 6/1/08

    I've made this twice. The first time I stuck to the receipe except I used chicken broth (Swansons low sodium). This time I used water and bouillon cubes and cut the amount of uncooked rice, because I wanted it to be a little soupy, and it turned out great both times. Add lots of pepper too. YUM! - 5/14/10

    We didn't like the consistency of the shredded chicken with the rice. Next time we would not shred the chicken Plus, it was very bland and needs something extra to add to the flavor... bell peppers and other veggies? I served it with salsa when we had leftovers, but it didn't improve it enough. - 4/2/08
