Ingredients

    3 very ripe medium bananas
    1 large egg
    1/3 cup milk or buttermilk
    1/2 cup splenda
    1/2 cup packed brown sugar
    1-1/2 cups flour
    1 teaspoon baking soda
    1 teaspoon salt
    3/4 cup chocolate chips

Directions

Preheat oven to 350.
Lightly coat 18 muffin tins with cooking spray.
In large bowl, mash bananas with fork.
Wisk in egg, milk, splenda, and sugar.
In separate bowl, combine flour, soda, and salt.
Add flour mixture to banana mixture and mix well.
Fold in chocolate chips.
Spoon batter into muffin cups.
Bake 25 minutes or until toothpick inserted in center comes out clean.
Allow to cool slightly and remove to wire rack.

    This was very tasty. I used a little more brown sugar and a little less Splenda (I'm not a big fan of Splenda). I used half whole wheat flour and half white flour. I also added a few chopped walnuts. Overall, these muffins were very tasty. - 4/27/08

    These muffins were great, and easy to make. It was my first batch of muffins. I used the Splenda Brown Sugar Blend to cut on the carbs a but, and I used Semi-Sweet chocolate chips. ANyways I loved it! great recipe! - 8/23/07

    I made these as mini muffins also and there is a bit of chocolate in every bite! These are delish! I like that there is no butter involved but they are still so rich!
    *I used 1/4 cup sugar instead of splenda as I didn't have any on hand.

    I didn't have any chocolate chips so I added a 1/4 cup of cocoa to the batter. It gave them a hint of chocolate flavor. My husband loved them so much he devoured 4 when he got home from work! - 3/19/08

    These are delicious and super easy to make. I used 1 C. whole wheat flour and 1/2 c. white flour, used egg substitute instead of egg. My daughter loved them and she always crinkles up her nose to whole wheat, can't tell it is in there. I used special dark choco chips tooWill definately make again - 3/11/08

    I used skim milk, less splenda, whole wheat flour, walnuts, and chopped a couple pieces of Dove dark chocolate....YUMM! Unsure of the calorie content. - 2/27/08

    I used real sugar instead of splenda and wheat flour instead of regular flour. I also used 1/2 cup of chocolate chips instead of the full amount as recommended by someone else. I'm impressed. They've got so much flavor. Yum. - 12/14/07

    if i made it again i would cut the splenda in half it overpowered the muffins and they tasted like faux sugar, everything else was wonderful otherwise.i used whole wheat flour too to up the fiber and goodness. these muffins were nice and moist too, i made them two days ago and they are still great! - 6/23/07

    Perfection! These have a lovely fresh taste to them, and are super easy! I added a recipe to the data base using 1% milk and Splenda brown sugar because that decreased the calories by 33 per muffin and the fat by 2 grams per muffin. - 3/8/10

    Made this last night as I had some bananas past the ripeness stage that I like to eat. I used 4 bananas and 1/2 c. whole wheat flour in place of part of the white flour. This was very good. Better than another recipe I have used for a long time - and this one is much healthier. - 2/17/10

    Easy and delicious. I adjusted with what I had in the fridge, instead of milk I put the coffee mate sugar free hazelnut! 1/4 cup splenda and 1/4 sugar and instead of 3/4 cup chocolate chips -- 1 full cup. wow were they delicious, I promise to follow the recipe completely next time. - 12/12/09
