Number of Servings: 75

Ingredients

    8 cloves garlic, minced or finely chopped (more if you LOVE garlic)
    1/2 tsp of black pepper (more if desired)
    2 tsp salt
    1/2 cup Extra Virgin Olive Oil
    1 cup Freshly squeezed lemon juice

Directions

1) Mix all ingredients into a container with secureable lid

2) Tighten lid

3) Shake vigorously until olive oil and lemon juice blend into one, after about 1 minute of shaking.

4) Spread over fresh spinach or any shredded salad greens!

    salad dressing servings are typically 2 TBL at around 80 calories for a light one. The servings for this are 1 tsp. That puts it more realistically at 108 calories a serving. More than others with more flavor - 2/4/10

    A middle eastern staple, this dressing is an old favorite! My family loves it. Try adding a tbsp. each of finely chopped fresh mint and basil for additional flavor. - 1/25/10

    I made this recipe and LOVE it. It was a bit sour for us - so added some Splenda [hubby a diabetic] and put half the salt in. LOVE that olive oil, garlic and lemon flavour. Our company enjoyed this dressing as well. - 2/4/10

    I made a similar version by Jamie Oliver w/o the garlic. Mixed one part lemon juice to 2 parts EVOO with a pinch of salt and pepper. You really don't need 1 TB (depending on salad size), just enough to coat, then mix. There should be no dressing swimming on the bottom. - 10/3/16

    For a stand alone salad dressing this was WAY TOO MUCH lemon for me. I only had enough fresh lemon to squeeze 3/4 cup, and even after doubling the olive oil and adding sugar this was still quite sour. Ended up adding oregano and soy sauce for more depth and it turned out alright. - 6/30/14

    The key is fresh lemons!!! Store bought lemon juice makes this dressing too tangy. The greatest part of this is you can add anything to the base recipe and never go wrong. I love to add a 1/2 tspn of dijion mustard. Anyways well done. - 3/25/11
