Introduction

These cookies are a variation on Happy Vegan Chocolate Chip cookies in VegWeb.com. I used whole hazelnuts in hopes that it would slow me down a bit when I'm eating these. Ingredients

    1/2 cup margarine
    1 cup brown sugar, not packed
    1 tbsp vanilla
    1/2 cup vanilla soy milk
    2 cups whole wheat flour
    2 tsp baking powder
    1 tbsp cinnamon
    1/2 tsp salt
    1 cup hazelnuts

Directions

Preheat oven to 350 degrees Farenheit.

In a large bowl beat margarine and sugar together, then add vanilla and soymilk and mix.

In another bowl, mix flour, baking powder, cinnamon and salt. Add to wet ingredients and mix together. Add hazelnuts and mix.

Place approximately 1 tbsp of dough per cookie on a greased baking sheet. These cookies don't spread, so you can bake them fairly close together. Bake in the oven for 8 minutes at 350. When they are done, they will not look much different than when raw.

    I realy love the flexibility of this recipe switching the nuts with healthy seeds or dried fruit keeps me from getting bored so I always have a "fix" for my sweet tooth THANK YOU! - 9/15/09

    This was a great cookie! I added vegan chocolate chips, because, well, why wouldn't you? :) I subbed cane sugar and molasses for the brown sugar, as it is what I had on hand. This was great, but honestly, leaving the hazelnuts whole didn't save me from eating a whole bunch! Thanks! - 4/10/12
