Ingredients

    2 cups fresh corn off of the cob
    1 cup fat free half and half
    1/2 cup 1% milk
    2 tbsp whipped butter
    1/2 cup dry mashed potato flakes
    3 slices of bacon, cooked crisp, patted dry, chopped
    1 cup chopped onion

Directions

Melt butter in pan on stove.
Add corn, onion and cook until tender.
Remove from heat and add to a medium pot.
Add all other ingredients.
Cook on low until heated and a bit think.
If it is still thin, you may add more potato flakes.
Use salt and peper if you like.
Very filling.

    Good side dish or soup. I use Hormel bacon bits (lower fat than bacon) and add bacon salt which boosts the bacon flavor and is 75% lower in sodium than regular salt. I also add a little chipotle pepper to kick it up a notch. - 8/30/08

    I added a dash of italian seasonings, a tablespoon of cayaen pepper, pepper, a tablespoon of co-jack cheese on the top and made an extra slice of bacon and sprinlked over the tope....also didn't use 1/2 and 1/2 but 1 1/2 cups of 1% milk instead....very good base recipe!! Thanks - 2/18/10

    I didn't have half and half so I substituted more milk. It still game out great. I added extra bacon, garlic powder and some shredded colby jack on top. YUM! I'm going to try it with chunks of ham in it next time too! - 8/31/08

    Easy and naturally sweet. I agree with CrafyC's additions. A low sodium chicken or vegetable broth would make a good base. - 8/30/08

    Really good! I used frozen corn but still cooked with onion. I also added just a dash of cayenne pepper so it has just a little kick. It seemed a little bland to me. And I did use 2% milk and found that 1/2 c potato flakes was too thick so I ended up using about 2 1/2 cups of milk total. - 6/3/11

    Very Good
    Just made this and added some chicken stock and a little fresh rosemary and thyme, as well as some cayenne. I don't have white beans, but I will add a can next time for protein and fiber. - 8/30/08

    Sounds good! Besides pepper and (maybe) salt, I'll add some finely chopped rosemary and maybe a little garlic. To make it even easier, I use Hormel Bacon Bits - real bacon, already shredded, a lot of the extra fat already removed. - 8/30/08
