Ingredients



    • 4 skinless, boneless chicken breast halves

    • 1 large egg, lightly beaten

    • 1/2 cup Italian-seasoned breadcrumbs

    • 2 cups spaghetti sauce

    • 1/2 cup (2 oz.) shredded mozzarella cheese

    • 1 tablespoon grated parmesan cheese

    • 1/4 cup chopped fresh parsley




Directions

1. Place chicken between two sheets of heavy-duty plastic wrap; flatten to 1/4 inch thickness, using a meat mallet or rolling pin. Dip chicken in egg, and dredge between breadcrumbs.



2. Cook chicken in a large nonstick skillet coated with cooking spray over medium-high heat until browned on both sides. Spoon spaghetti sauce over chicken; bring to a boil. Cover, reduce, heat and simmer 10 minutes.



3. Sprinkle with cheeses and parsley; cover and simmer 5 additional minutes or until cheeses melt.

    Instead of using butter in the frying pan, I sprayed a non-stickl cooking spray in a glass casserole dish and baked me chicken. I baked it at 350 degrees, 20 mins covered. Then I added the sauce and cheese and baked it 20 mins more uncovered. It turned out amazing!! Definately making again! - 2/24/09

    A very handy recipe. I bake my chicken in the oven, then you don't have to add any butter. Another good substitution is to dip the chicken in fat free plain yogurt in stead of the egg. - 11/25/08

    To reduce the calories & fat further, I dipped the chicken in fat-free milk, used a reduced fat/calorie spread to fry it and used fat free mozzerella cheese. It was still great! My kids even liked it and they are SO picky. - 7/6/09

    I put mine in the oven. You don't need the egg, the moisture in the chicken holds the bread crumbs on. And just spray a pan with cooking spray and bake for about an hour, add sauce and cheese. Tastes great and less calories and fat. - 5/29/08

    I baked this according to Butterflies4ever suggestion & it was GREAT!!! Much easier than frying & no calories from butter. This recipe would serve 6 nicely with the chicken pounded thin -- tender & large filets. Will definitely do again!! - 3/22/09

    Awesome taste, quick meal. My husband follows a GF diet so I used crushed GF Corn Chex or Rice Chex cereal with dried italian herbs instead of the breadcrumbs. - 6/3/09

    I make something very similar. I will use olive oil instead of butter so that there is a healthier fat. I will use egg whites instead of a whole egg and also use low fat cheese. We either cook on stove top in cast iron skillet or bake it it. Overall good!!!! - 11/24/08

    Too much sodium & fat from sauce & butter. Lighter version: use home-made or low-sodium sauce & low fat cheeses, & bake in oven with non-stick butter flavored cooking spray, browning on both sides before adding sauce and cheese. Skip egg & bread crumbs & use spice rub to lower carb count as well. - 11/24/08

    I didn't flatten the chicken breast before cooking, so I added a few more minutes to the browning stage. It was still very easy to make, and my husband and I enjoyed it. Served it with angel hair pasta and a salad.

    I make something similar but less cals. I use about a cup of breadcrumbs, some onion powder, some garlic salt, italian seasoning mix and a couple tablespoons of parm cheese. Mix all together. In the past I used olive oil to coat the chicken, found you can skip it still sticks. Cook on George Forman - 6/3/08

    Great recipe!!! I used Butterfly's suggestions, but I had to cook it an additional 10 minutes. Next time I will cool it for 30 mintues, add the sauce and cheese, and cook it an additional 20 minutes. I seasoned my chicken before adding the bread crumbs. Overall, very good.     Cut sodium by making your own spaghetti sauce with fresh tomatoes, diced, and spices. Lower fat by using FF or RF cheese and don't bother to breadcrumb the chicken: in the sauce, with all that cheese, you won't miss a few breadcrumbs, but if you insist, then use egg substitute and Fiber 1 cereal. - 5/28/08

    My family loves this recipe I have been making it for years. I cut chicken into thin slices, instead of flattening them coat with egg and Italian bread crumbs. pan sear chicken til done, then place in baking dish and add remaning ingredients a place in oven for about 15-20 min. serve overpasta, rice - 7/24/09

    Will use olive oil instead of butter, and complete cooking by putting in the oven. If you pour the sause over and boil, you will turn the coating to mush. Place browned chicken on a foil lined tray, top with heated sauce and cheeses. Bake at 400 until cheese melts. - 5/28/09

    I am assuming that the high sodium comes from the prepared spaghetti sauce. If you made your own sauce, or looked for a prepared sauce that was low-sodium, it might reduce the sodium count. - 5/28/08

    This was very easy to fix, although I did change it just a bit. Instead of cooking in butter, I used Pam and it turned out great. I put the chicken on pasta and added more sauce so it would cover most the pasta. - 2/26/08

    This recipe is delicious and so easy to make. I used olive oil instead of butter and didn't have any mozzarella cheese so made it with 1/2 c. real grated parmesan and 1 T. shredded sharp cheddar.     I to didn't fry it, baked it. I didn't use egg. Just sprayed a little pam and dregged the chicken in homemade spiced bread crumbs. Made my own sauce added mushrooms, peppers and zuchinni put the sauce on when chicken was about done then cheese the last five minutes. Delicious and a keeper! - 7/25/09

    instead of dipping the chicken in egg, I marinate my chicken for 6 hrs or overnight in low fat buttermilk before I dip it into a bread mixture. The buttermilk REALLY makes the chicken tender and it will NOT dry out when cooking. Also, to cut down on calories, use a low fat cheese. YUMMY!!! - 4/11/10

    Anything to give chicken a new "twist" is always appreciated. I did change it a bit. I used a can of Italian diced tomatoes. They are not filled with things I would add myself; like sugar and starches. But over all, this recipe was great! - 8/30/09

    This is a very basic recipe. I made it healthier.I do my best to eat healthy and avoid fried foods unless using olive oil or spray olive oil. Avoid butter and trans fats. Use reduced fat mozzarella. Baking is better. Try to use whole grain bread crumbs or mix 1/2 white/WW bread. Egg white only. - 8/30/09

    Instead of covering I placed it in the oven and after a while placed the cheese on it . I was concerned it would be to moist. Didn't have the crunch good parmesan chick has , but it was quick , I had the ingredients on hand and the family loved it. I have made it more then once and will continue. - 8/5/09

    I make this all the time, but bake it in the oven at 400 on a lightly buttered cookie sheet; turn over after 10 minutes; spoon on SALSA...just on the chicken; bake 10 more minutes and top with mozzarrella slices for the last 30 seconds. Eat less,pound the breasts and then cut them into smaller piece - 10/24/09
