Ingredients

    2 tsp vegetable oil
    1 large garlic clove, minced
    1 small onion chopped, 1 medium yellow summer squash, diced
    1 cup chopped tomatillos, about 4 medium
    15 1/2 oz. can hominy, drained and rinsed
    1 medium jalapeno cored, seeded, and minced. Do not touch seeds with bare hands.
    1/2 tsp. salt
    1/2 tsp. dried oregano
    1/4 tsp ground cumin
    1/4 tsp black pepper
    1 tbsp uncooked corn grits, regular variety
    1 pound uncooked boneless, skinless chicken breast, cut into bite size pieces.
    1 1/2 cups fat free chicken broth

Directions

Saute minced onion and garlic, put in slow cooker. Chop jalapeno, be careful not touch seeds of jalapeno when chopping, add to pot. Cut chicken into cubes and add to pot with the rest of the ingredients. Stir well making sure grits are not lumped together. Cook on low heat for 4 or 5 hours.

    This is delicious! I made it subbing in the ingredients I had in my pantry (can of diced tomatoes instead of tomatillos and left out squash, used ital seasoning instead of plain oregano) and it was OH SO GOOD!!!!!!!Will make again. Even my 10 year old ate it up! Thanks for sharing this yumminess! - 3/12/11

    Incredible!
    This was a very good meal. Only one person out of the four was not impressed and it was not my wife, who while pick up the ingredients said "yuck" in font of the kids. She was the one who made the comment how good it was. Will be make this one again. Thanks. :-) - 8/21/12
