Ingredients

    1/2 cup amaranth flour
    1/2 cup brown rice flour
    1/4 tapioca flour
    1/4 potato starch
    1/8 tsp xanthum gum
    1 tsp unbuffered Vitamin C powder OR 2 Tbsp lemon juice
    1 tsp salt
    1/4 cup sugar
    6 Tbsp flax seed meal
    1/2 cup raisins
    1 cup grated carrot
    1 small can crushed pineapple (do not drain)
    1 large egg
    1/4 canola oil
    1 tsp vanilla
    1/4 tsp cinnamon
    1/4 nutmeg
    about 3/4 water

Directions

Preheat oven to 375. Combine dry ingredients in a mixing bowl. Stir in carrot and raisins. Add pineapple, egg, oil, vanilla, lemon juice (if using) and water. Add enough water to make mixture like thick cake batter. Spoon mixture into greased muffin tins. Bake for 20 minutes or until done.
