Introduction

A simple but satisfying dessert that can be thrown together with basic pantry staples! A simple but satisfying dessert that can be thrown together with basic pantry staples!
Number of Servings: 6

Ingredients

    3 cups fresh or frozen berries of your choice (I use Trader Joe's Very Cherry Berry Blend, thawed)
    1 tbsp powdered sugar
    2 cups multigrain pancake mix
    1 cup milk
    2 large eggs
    Cooking spray

Directions

Lightly spray the inside of an 8x8 inch baking pan with cooking spray. Place berries in dish, stir in the powdered sugar. In a large bowl, mix together pancake mix, milk and eggs. Pour batter over the top of berries. Bake for about 30 minutes at 350 degrees.

Serves 6. Great topped with a scoop of lowfat vanilla frozen yogurt!

    Great. I used the TJ's baking mix. Next time I would probably use two bags of fruit and a wider pan. Yummie. - 1/25/08

    I added lemon zest to berries and 2T pwderd sugar - Need to add 1T sugar to pancake mix along w/ 1/2t cinnamon. Good basic recipe. - 8/21/11

    Made this for my family, and got their input. It was very good, but next time, I will add more fruit, a little more powdered sugar, and only half the batter. - 7/4/10
