A simple but satisfying dessert that can be thrown together with basic pantry staples! A simple but satisfying dessert that can be thrown together with basic pantry staples!Number of Servings: 6
Ingredients

3 cups fresh or frozen berries of your choice (I use Trader Joe's Very Cherry Berry Blend, thawed)
1 tbsp powdered sugar
2 cups multigrain pancake mix
1 cup milk
2 large eggs
Cooking spray
Directions
Lightly spray the inside of an 8x8 inch baking pan with cooking spray. Place berries in dish, stir in the powdered sugar. In a large bowl, mix together pancake mix, milk and eggs. Pour batter over the top of berries. Bake for about 30 minutes at 350 degrees.
Serves 6. Great topped with a scoop of lowfat vanilla frozen yogurt!
